As far what I'd like to see in iTunes,
Lame importing support!
FLAC importing support.
DivX playback support.

Also, it would be awesome to import a DVD for playback on an iPhone/iPod mp4. (But I realize this will never happen)
It would also be good for Apple to play nicely and allow third party developers to develop plug-ins easier.
