Windows/Mac formatted iPhone
I know for iPods they are formatted as HFS or Fat32, but is this the same case for iPhones?

i.e a restored iPhone on windows wouldn't work with OS X and vice versa?

^that only applies to ipods that work as external disks. Iphone doesn't work as an external disk, so it's not an issue with the iphone (and also the ipod touch).
