if you select the movie in iTunes, then go to the Advanced Menu, you should have a Convert Selection to iPod/iPhone option.

try that (but it takes a long time, in my experience, for it to convert so let it go overnight)

I use iSquint, do it as normal to convert it and place it in iTunes (movies) and then from the iPhone Devices section (tabs up the top when you select your device) select 'Video' and then select 'Sync Movies' and select your movie (tick box) and then select apply (once you tick box your movie a cancel / apply will appear). This will start a sync process of your iPhone and transfer it across.

iPhone & Touch are very particular about video data rates and so on.

Handbrake has custom settings for these devices, which you should use.

In spite of the non-widescreen, the Nano & Classic can handle 50% higher data rate than iPhone/Touch. Another of Apple's 'inconceivable' design choices.
