IMAP is designed to support multiple devices connecting to the same email account simultaneously by keeping everything stored on the mail server and just caching the messages on the local device to improve performance and retain offline mail support.
What that means in the real world is that if you've configured your iPhone to access the same IMAP accounts as your iMac, and you are using both at the same time, you should have no problems. Changes made to email messages on the iPhone are reflected on the iMac the next time Mail checks the server, and vice-versa.
The only problem I've encountered is when I am viewing a message on the iPhone and my MBP decides to apply a message rule and move that message to another folder, which will cause the iPhone to return unexpectedly to the message list when it realises the message has been moved on the server.
