Yes it would be a wise move to move to FW 1.1.2 but lets get you phone working first.
Then we will work on that. Go one step at a time so get relaxed and dont be in a rush.

It seems to have an issue with my SIM, no surprise, as i don't have the AT&T. so dialling 0 then hitting hold doesn't work, unless I am just too slow

you dont need the AT&T sim reboot the phone & try again take a deep breath this works m8

dialling *#307# without sim or with my optus sim don't work, says "sim pin requested"
Dialing 0 then trying to hit "hold" doesn't work, no reaction at all

Just trying both ways.
Okay, rebooted phone.
main screen says:
Activate iPhone
Slide for emergency
then in the middle saysSim Locked
Trying to dial either number results in
error performing request
sim pin required
|

I didnt see you have written sim pin
IPHONE will not work with a sim with a PIN you need to find another GSM phone and remove that PIN

I am not on Optus so I don't know what thats about possibly because you removed the sim pin.
If everything works you can disregard
Take a break relax & let you phone have a rest.
I will be here for & you can decide if you want FW 1.1.2
