Configuring:
After receiving your unlock from your carrier in iTunes:
1. Insert your 3 SIM and restore the iPhone in iTunes if your phone still can't make calls
2. Put the APN in: 3services (Settings -> General -> Cellular Network Data) - no username or password
3. Set the voicemail button to work: *5005*86*333# then press call
4. Bookmark your Three Call and Usage Tracker in Safari
http://three.net.au/hss/getmyaccount.do
5. If you need one, add smtp.three.net.au as an additional outgoing mail server. It is 20c per message on some plans, so you may prefer to use another.
6. If you want a "visual voicemail" style thing:
Set up your Three voicemail in mail (link).
You're done
The plans:
If you'd like $300 credit and free 2GB of data, you can change to a Three iPhone plan (1GB on $49 cap).
You will have to pay off your existing handset instalments if any, but the $300 should be enough to cover that. You will need to be over half way through your contract too.

Sure I can't smash out crazy data usage in Roaming areas, but I have no need - these things can wait 10 minutes till I'm in a 3G area.
My 3 iPhone experience so far - 9/10

The other thing is that the data speed on Three is at least 2 or 3 times faster than the mobile data on optus.
