It isn't an AT&T thing.

Maybe have the iPhone 'awake' when you plug it in and unlocked (home screen).
Or eject SIM then insert again.

Mine does, but I've seen on other peoples computer where it doesn't even show the phone number line.

i know that the ones at work (demo iphones) show the number in iTunes they also shopw the number in
settings>phone

im thinking it might be a telstra thing as i havent seen any Voda or Optus phones with it showing

Mine is a default Vodafone SIM and I have never touched it or programmed anything into it.

My iPhone 3G is older than yours because I got it on the second day (first weekend) after launch. Ran straight to the city to buy it, George St DSE PowerHouse. 8GB outright.

If I had my first gen it would be ##730... !
