What is with the Carrier settings in my iPhone
Under Carrier settings on my iPhone, I have automatic (what it is on), YES OPTUS (3G), YES OPTUS, Telstra (3G), Telstra and Vodafone AU.

Is this normal to have all 5 options?

Yeah, all phones will see all networks - but if you try and choose one that isn't your home network it should say invalid network or something.
