Oh and mine didn't do a software restore either, maybe because I manual sync my iPhone.
But I did what my instruction said. Nothing else.

Can you go to the APN settings, and enter '3services' then browse in Safari to http://three.net.au (You can only get here from a 3 SIM card) then take a screenshot and post here :-)

We have, many time now, set APN to 3services then goto three.net.au in Safari.
Sorry don't mean to sound harsh but you seem very reluctant to do this...

Also, now that you've put a 3 sim in and it works, can you try switching back to your other SIM to see if it works again? If the phone is truly unlocked than hopefully that should work for you.
