Ok, well firstly, thanks to Kristine at Optus 2nd Level Support.
So, what you will need to do:
1. Plug in iPhone and Restore
NOTE: If you are on a Mac and have previously restored your iPhone, delete the update file from User Name/Library/iTunes/iPhone Software Updates
2. Download the update as part of the restore - This should be a file called "iPhone1,2_2.0_5A347_Restore.ipsw"
3. Let the iPhone do it's thing and flash the unit.
4. Do initial sync with iTunes then Power Cycle Unit.
5. Plug back in and Sync.
6. Power down, change SIM and power up and hey presto you should be right to rock and roll.
Enjoy your Unlocked iPhone.

I wonder if this file (iPhone1,2_2.0_5A347_Restore.ipsw) is generic....and thats all thats really needed??

Got the message, however tried the first method of:
1. Power Off
2. Swap Sim
3. Sync with iTunes
Which achieved nothing.
So going to try the restore method.

Let's hope so... But I can't imagine that would be the case. Apple have a few reasonably intelligent people working for them.

yay!
just rang optus and got them to unlock my iphone also.
i didnt realise it was free for post-paid although i guess this makes sense since we're locked in by contract. Still its not like telcos to do something useful for free. said it would take 10 workings days, oh well.

That firmware has been out for a while, it's nothing new, it's just only an update when you choose to restore, not when you just sync and check update.
