Handbrake can convert it to an mpeg4. Then import it into iTunes and sync.

Yes, I can't recommend software because I don't have a Mac but you need to decrypt or rip it onto your hard drive into a file, then convert that into an MP4.
EDIT: HandBrake

Here's my handbrake guide:
1. Insert DVD
2. Start Handbrake
3. Select iPod Touch/iPhone preset from sidebar
4. Click Start
5. Wait a while
...
6. Import to iTunes
7. Laugh maniacally (optional)

For PC use I use Videora. Annoying popads in the software but it converts well. A normal episode of a show like Doctor Who takes about 5 minutes to convert on my PC. I've never done a DVD but it does them as well.

Yep. Or iSquint by the same people. It's free but just converts for iPods/iTunes. So no other codecs like in Visual Hub.

No, It'll only do DVD's for me.
You can use Quicktime pro for converting avi's to mp4.

Visualhub/iSquint is quite good, very easy to use, I personally don't know everything there is to know about video encoding so it streamlines the whole process.
Plus you can queue up files, also it supports xgrid so you can cluster several computers together.

Yep, Handbrake is good to do a DVD at a time, otherwise you need Mac The Ripper and Handbrake to do a bunch of DVDs. If you have files that are not on DVD, use iSquint/Visual Hub.
