Lots of little things; no copy and paste, no SMS character count, can't insert contact details into messages/emails, no obvious way to add custom words to dictionary, no dictionary app.
Basically, give us a contextual right click-y menu (copy and paste, insert data, open new window) and sms character count.
I've had a few problems with random crashes, and things not quite working, but I imagine that'll get ironed out in 2.1.

I thought you "train" the dictionary to add custom words. All you do is spell it out, and press the "x" on the dictionary's selected word. The moment you add a space bar after this new word, it adds it to it's own list, so when you spell it again, it won't try to "autocorrect".
I haven't crashed it yet - I don't push it hard...

This is odd. My iPhone was freezing when it sleeped, had to plug it into the computer or reboot it. Fixed now. Hope it doesn't happen again <_<.

i guess this isn't a fault but i would like mail to recognise an address or date (much like mail on the mac does) so that you can select it and add it to the ical or yr contacts. it recognises phone numbers and has a little pop-up for that... and you can add deets from a map search so why not mail? it would be really really helpful!

Yes it did. (As I said :P, had to plug it into the computer or reboot it  ). Has this happened to anyone before, though? (3g or 2.5g iPhone?). I'm hopping mine isn't dying already :P.

being a portable device I would like it to store files saving me carrying another device.... flash drive or portable HD (transfer via BT would be nice here too).
Word, excel.... view PDFs?
Is there a "find" function???
This being said it is a great device... not just because its an Apple product

it would be nice to be able to call a number from a calender event by tapping on it, or even find an address in maps. From what I can see the calender is read only  and no copy / paste means that if I want to call a customer from a calender appointment I need to physically write it down first...
In my job as a sales rep I see anywhere from 5 - 8 customers a day, so I'm not going to save them all as contacts. A little annoying.

I second this problem. I used to work as a pa and I suppose I've carried over some of those practises to my everyday life at home with kids (I still work a couple of days in a different job)
I use my calendar to make notes of everything. If I make a call I don't just put notes on a piece of paper to lose I enter it all into the notes section of my calendar. The first thing I tried to do the other day was dial a number from my notes but there isn't this option so that means writing the number down so I can then dial it.
SMS character count is a must. A cope and paste function is also a must. You get an email and need to put the information into your calendar you can't do it. You need to copy a number to a text message you can't etc etc.
Google would be better if the screen could be turned.
Sending contacts via bluetooth or email. Someone might want a number. Especially an option to open up your contacts and hit file send contact via xyz would be great.
The great thing with this device is all the things that are annoying can mainly be updated through a future software update and its not exactly difficult with itunes and mobile me set up.
I also think the ability to save a document to the hard drive of the phone would be good but I guess the work is changing with things like idisk and most computers have email.
Has anyone worked out how to get your to-do list to your iphone?

I get a strange feeling that Apple isn't going to fix the things mentioned above, which most people find quite important.
These things have been a problem in the first gen, and they had a year to fix them and didn't. Why would they do it now? I guess the rushed 2.0 release it's the only reasonable answer I can find. Surely it can't be hard to display how many characters are being typed in an SMS! The phone certainly knows how many, it just isn't displayed.
Some of these issues surprise me from Apple. Especially after the big fuss about the wireless world and macbook air. I didn't know the wireless world included pen and paper to copy and paste and share information with colleagues/friends/family such as contact details.

ok, note to all... If your iPhone freezes in a program for any reason,, wait 20 seconds and the system will Force quit it for you so you don't have to reset it. Just a developer's note on the issue

I agree there is room for improvement here. I am using ical to call dozens of clients everyday. They are all in my contact list, so they are all on the iPhone.
It would be nice to have that integrated with contacts and the phone function so that touching the Number in the iCal notes, makes the call.
