Possible to permanentaly display istat windows?
Is there a way to display the istat windows other than by clicking them in the menu bar? I run an external monitor on which I'd like to keep these windows open permanently. Is this an option I'm not seeing? The istat download page shows a bunch open...

iStat menus isn't really designed for that usage.

You could run iStat as a stand alone application, or the iStat pro widget with the "Running widgets outside of dashboard" modification detailed in this blog entry on iSlayer's site.

I reckon those would be better suited to the task.
