I've been away from the Mac world for a long time.
When I left you had to have a Postscript™ laser printer.

Is this the case ?
I've seen Lexmark printers that are PCL5e and they claim to have support for Mac OS X.

What do people use out there and what do you recommended ?

I recommended a Kyocera FS 1030? - can't remember exactly which one, it came from Streetwise - to some friends about 6 months ago. They're happy with it. PostScript doesn't seem to be a requirement these days.

I've been using an HP 6MP for years in my business. Keeps on going & its output is still excellent. I have to connect it via ethernet with an AppleTalk bridge these days, which can be a bit fiddly sometimes but otherwise it's good.

I would go for lexmark over Kyocera cause the latter does not print pictures very well, for instance, if you print a picture from Preview it would print something like '*& *( *& *(& (((@@$%@%' I am happy with my canon ip1000 (it is not a laser)

My Kyocera (FS1010) prints pictures perfectly and has postscript. Kyoceras have the lowest TCO of any make of laser printer. Get one. You won't regret it.

EDIT: To adress your initial question, postscript isn't a requirement, but it's output is way better than PCL5e (especially in OSX where basically everything gets printed as a PDF).

When I was in Dick Smith the other day I posed the usual question "which ones (Print/scan etc station) don't run on a mac" The assistant said they all run on a mac these days

I bought a Lexmark Optra M410n back in 2000, and apart from a recent service, has been running without problems. Built in PS and 10/100.

I run a ancient HP4L parrallel laster printer on my PB with a USB to Parallel adapter. OSX even has a built in driver for it!!

I have a Brother hl-2040 which works well. Beware - some other cheaper lasers are windows-only. Like the canon lbp-1120.

Which I bought and then had to sell when I later got a mac.
