Full Bluetooth support? Keep dreaming! It was crippled on the first gen and it'll be crippled in this model.

Strongly doubt there will ever be MMS support, as Apple have gone the email route instead of MMS. Honestly I agree with their decision to do that and push mobile phone data use forward. MMS sucks.

I think copy and paste will make an appearance at some point. Not sure when, but it's so highly requested and useful that I doubt Apple would be able to ignore it for long.

As for the bluetooth, who knows. I'm not even sure why they didn't include bluetooth file transfer with the original iPhone. Perhaps again because they wanted to push data use. It is the iPhone afterall. /shrug. We'll see, won't we.

Edit: By the way, there will probably never be A2DP support with this iPhone. Don't see it holding out battery life too well if they ever included that, and also can't see them pushing that functionality when even the iPods don't have it.
