There's two parts to iStat Server: the GUI app and a background app. The background app will start on boot up anyway, so you don't need to add the iStat Server GUI app to your startup items. However, there might be a bug that's stopping the window of iStat Server from hiding... we're looking into that now.
New versions of iStat and iStat Server are being worked on.

All i did was add LSUIElement to the Info.plist, then the programs hidden for good :P except the first window
