Default photos and music in a mac and windows home?

So, I just got my first may and I have to say I'm loving it so far. I'm slowly learning how to do some stuff on it.

Anyway, on to my question. I have a mixed windows and mac environment at home. Basically I have a large media centre computer (running Windows 7 RC1) which is hooked up to my TV for music, TV shows, movies and photos.

Now, I would like to use iPhoto and iTunes on my mac to manage my music however I would still like to keep a proper folder structure behind the scenes. I would also like changes on my windows box to sync to my macbook (either instantly or on a schedule) and would like changes made on the macbook to sync back to the windows system.

Does anybody have any suggestions how I could accomplish this?
