iPod/iPhone -> TV

I know there is this option:
Apple Store (Australia) - Apple Composite AV Cable
but can anyone tell me what happens on screen when you are not watching a movie or looking at photos?

Does it just show whatever you are doing on the iPod/iPhone?

(I'm more interested in its behaviour with an iPod Touch )

It dosent, nothing will output onto the TV apart from Videos/Photos.

On a similar topic- I have a Red, White and Yellow cable that plugs into the audio jack of an iphone/ipod... can i use this with a TV that has the same connection? (it worked with my 30Gb ipod video 5th gen)

Be aware, iPhones with 2.1 need an (overpriced) Apple AV cable.
3rd party cables won't work (and mine doesn't even with and Apple cable).
