I'd say that by release a lot more of them will be as well. I'd expect iLife09 to be 64 bit along with all the pro applications. I foresee a January show with a bloke in a pair of jeans and a black skivvy saying the following:
See how snappy that is? Click to launch and boom, it's open and you are editing x y z.

A G4 with Dual 1.8ghz, 2gb of RAM, a Radeon 9800 Pro, and a 10000rpm HD should do the trick.

I envision some kind of revolutionary screen sharing sometime in the future that would work mac to mac, but just use vpn if going differently. Basically it would involve your desktop transmorphing into their desktop via some kind of user-system preference file that loads, and if you want to use an application they don't have, it's screen shared like a window in Unity mode in VMWare. However you'd need a fast internet connection as I think that would be a lot of data.
I think I'll just settle for audio in screen-sharing.

I heard that some company had made a 4GB battery-supported RAM PCI card for PCs where you could put the boot OS in that, and have the PCI card selected as the boot device. That way the PC wouldn't have to wait for the slow HDD reading time, and just launch itself into working... in Windows unfortunately (A great leap forward, a million steps backwards).

Oh how you have reminded me of the UK's version of Apple. Acorn. They shipped the OS for their Archimedes computers on an EEPROM (think that is how it was spelt!) chip. Instant boot up times. Upgradeable as it was also flashable. My old man tried to lecture me against Apple and then saying he could never get a virus as the OS was on a chip - I then reminded him that the first viruses for computers were based on flashing the BIOS chip. He shut up quickly after that.

while we're on scrollbars, howcome some apps like itunes don't let you configure them with pointers (hopefully double) at both ends? Is this one of those "some devs ignore the app framework guidelines" thing? if so why is it apple?

yeah like that, but i go for double at both ends.
problem is, most apps listen to that control panel and some (e.g. itunes) don't.
