I am not sure. It could be when you first set up the computer you did not set it to UK English?

+: to bring up the spelling and grammar window (or Edit->Spelling and Grammar->Show Spelling and Grammar) and change the dictionary at the bottom. Works for most Applications (and the change should be global) as long as the app doesn't do its own spelling like some MS applications like to do.

open system preferences,
then select international click edit list,
then select Australian English, then select OK
make sure it is at the top of your languages list.
Log out of your user account and relog in and
BAM australian english

same method (safari uses OS X built in spell checker)
click inside a text form then Edit->Spelling and Grammar->Show Spelling and Grammar and change from English to Australian English

+2 from me too. I had changed in the past and I can't remember how I did it , but everytime I restarted my Mac, it would revert back to American English which like Aa would drive me freaking nuts again. Your method has made it " stick". Good tip.
Stewie
Edit: Firefox , which seems to be pretty popular amongst us Mac users, is pretty easy to setup this way as well.
Firefox -> Preferences -> Advanced -> General and then scroll down to Languages -> " Choose your preferred language for displaying pages" -> Choose and then add Australian English to the list , then move it to the top of the list. Bingo.
Stewie
