Can I make my Mac use English instead of American?

I'm running 10.4.9. Is there a way I can make my Mac's spellcheck use Australian English instead of American English? Word etc is using Australian English, but when I type in Mail it keeps telling me I have spelt things wrong. Just as bad, it tells me that mistakes like "color" are correct.

Edit --> Spelling --> Spelling --> Change the dictionary dropdown from American English to Australian English

In the application you want to change:

Edit > Spelling > Spelling… and then select “Australian English”

Try going to Sys Prefs > International and choosing Australian.
You should then get an Oz flag right next to the Spotlight icon (top right).
You can have multiple selections there and switch between them if you need.
In M$ Word, you can switch between languages for spell checking -- or better still, turn the whole thing off!!
