Gigabit ethernet has been in PowerMacs since the model up from the sawtooth I believe and that was ages ago. Even PowerBooks have had it for a while. However in a consumer machine I'm not that fussed a bout it's absence. Whilst it is appears onboard on PC's these days it's primarily at the higher end of the market. And remember gigabit doesn't acheive it's full performance on most machines as they just don't have the bandwidth (at the moment).
Some people are saying that the Mac mini will requires the same or similar case cracking tool to the iPod. Which is no big deal assuming you can get a hold of one.
Also worth noting is that most shops that sells Apple machines can install the RAM, not just Apple. My usual Mac shop for instance sold gave me a great price on a 512 MB stick for my PowerBook, probably not even half what Apple were charging, so you won't have to pay their silly prices if you want 1 gig of RAM and their price for 512 Mb is only about 20 AUD more than the cheapest PC stuff 120 vs 100 AFAIK
