My wife bought a CDRW disk so that I can stop accumulating so many disks. After burning one document on the disk I cannot delete it or add another document on the disk.
After getting info on the disk It tells me there is no space available.
What did I do wrong here??

I was not quite sure what you were referring to so I have supplied THREE answers. I really hope one of them helps.
A: I have a feeling I may know what is up. Now, although I use toast, I am fairly sure similar rules will apply. I'm guessing you are referring to multi session CD's? If yes the files have to be burnt as disk images (.img or .dmg) You burn multiple images to the disk that later mount as individual volumes (one CD may pretend to be 3 or 4 CD's). If you burn files in multi session format and chuck files into folder A then finish and later try to burn files to a new folder B on the same disk it will/may burn the data but it (folder B ) will never mount and you will not be able to access it (folder A should still be good). Help files can be useful here but they are not perfect by any standard. (I wish someone told me this before I generated so many coasters) Get some re-writable CD's and muck around. I promise that this is the cheapest way to learn. No less frustrating but at least you can erase the re-writable and start again. (the downside is they are only 650 MB rather than 700 MB capacity)
B: Another possibillity is that your CD RW is not supported by OS X and is missing some functionality (patchburn reader can help here)
C: And FINALLY if you are referring to just a single re-writable CD you will find these need to be fully erased before they can be re-written (there may be a fast erase and complete erase option depending on the software). They do not work the same way as magnetic media in this respect. You cannot just add tiny increments here and there. The best thing I believe is get the content together; burn it to two types of media CD and DVD or two different brands of either; verify both sets of data (check this yourself. Don't just assume the computer got it right) AND lastly delete the originals should you want the space. (never ever rely on just one copy. It WILL end in tears)

i woulud supply my answer but i think kim answered it pretty well
make sure your not closing the session also, and that the burner recognises it as a CD-RW disk and not just CD-R, as it might be writing in CD-R format (i've heard this is possible) to CD-RW disk, making it appear to be non re writeable..

thanks for your answer. As you can tell I still don't know the basic in's and out's of using my Mac (even though i have had this Mac for a year now). I now understand that CD RW does not mean incremental savings to disk unless I use multi session burning.
PS I don't know how to insert those smiley things I thought dragging them to my post area would make them show up. Obviously I was wrong.

Recording on a CD-R disc more than once
Normally, you can only burn information to a CD-R disc one time. If you use a CD-RW disc, you can erase the disc and then record on it again.
There is a way to use a CD-R disc more than once. If you use Disk Utility to burn the disc, you can set up the disc to accept more disk images in the future. This way, you can burn a disk image now and add to the disc later until there is no more room on the disc. This is called "multisession" burning.
IMPORTANT: Some formats (such as ISO) only allow one disc burning session. Others, such as HFS+ (Mac-OS Extended) allow more than one session until the disc is filled.
Create a folder for the session and drag the items you want to burn into the folder.
Open Disk Utility, located in Applications/Utilities.
Select Images > New > "Image from Folder." Then select the folder you created in the navigation window and click Open.
Type a name for the image, choose a disk format, and click Save.
When the disk image is complete, select it in the left column of the Disk Utility window.
Choose Images > Burn or click Burn in the tool bar.
Insert a blank CD in the optical drive.
Select the "Leave disc appendable" checkbox. If you don't see this option, click the triangle in the top-right corner to see this option.
Click Burn.
To add to the disc later, follow the steps above to create a new disc image and burn it to the disc.

So everything is good now? Sometimes asking a question of a person is far more helpful than the help. Help can be quite limited in that sometimes you need to have a good idea what you want to be able to ask the right question in the first place. As such I am not concerned that you later found an answer in help. Hopefully between our input and mac help you will have everything under control.
