Default Powermac G5 CPU usage question

Hiya chaps.

When I go to lunch, i lock the screen(s) of my G5 Powermac. When I do this, the CPU freaks out. I came back from lunch today, and checked my iStat Menus cpu graph:

Wouldn't paging be happening all the time? This only happens when I lock the screen and the screen saver becomes active.

Before and after that, it calms down.
